Our winemaker, Michael Barton, is committed to bottling the best varietals that Texas has to offer. Every wine is handmade in our cellar. The Hilmy Cellars label produces and bottles wine in small lots. We use stainless steel tanks in addition to French and American oak barrels. We strive to make wines of the highest quality in every bin, vat, tank, or barrel. Over 85% of our grapes come from the Texas High Plains. We believe that Texas wines are unique and expressive. Our goal is to preserve the integrity and capture the expression of the grape in each bottle. We work diligently to maintain quality in farming and to achieve harmony in the various factors contributing to great wine.
